Brand-new restaurant, Hume, is officially open in Liverpool.
Hume has proudly opened its doors on Gradwell Street in the city-centre, serving delicious breakfast, brunch and lunch, a wide range of hot and cold drinks and alcohol too. It’s focused on using sustainable wholefoods and speciality coffee which help support the health of the community and the planet, serving a nutrition-packed menu Wednesday to Sunday, and embracing the rejection of ultra-processed foods.
With diets ever more delicate and the planet’s dwindling resources ever more stretched, Hume intends to make a positive impact for both its customers, the community and the wider world.

Hume’s founder, Allan Eves, has been planning his new venture for months and it’s proudly based in one of Liverpool’s busiest areas. Hume aims to be partnership-led, so as well as having a great relationship with their customers and the public, Allan and his team want to work collaboratively with organisations and institutions in the city to support healthier living and sustainable practices.
This will include reaching out to schools, universities, the NHS, the council and private sector organisations to explore how they can work together to achieve a shared vision of a healthier future.
The loss of Allan’s mother to cancer is partly what led him to create Hume. Allan says:
“I’m very excited to introduce Hume to Liverpool and our fantastic menu. Hume is partly in honour of my mum who sadly passed away in 2024 to cancer. She was an extraordinary person and spent her life in the service of others. I’m hoping I can honour her memory by creating something which will contribute to the health and happiness of the Liverpool community and be in service to natural world that we all share.
“Hume is focused on healthy choices and trying to put goodness into our bodies with our fantastic menu, whilst also respecting the sustainability and health of the planet too. The rise of non-communicable diseases, including cancer, are all heartbreakingly common, and they needn’t be. At Hume we’re also working to reduce and eliminate our waste, adopt circular economy principles and actively contribute to the Liverpool City Region Net Zero Pathway and Sustainable Development Goals.”

One cornerstone of Hume’s ethos is all dishes are made with wholefoods absolutely no stabilisers, emulsifiers, added colourings, flavourings or sweeteners are used and Hume is meat-free too. Some of the key dishes include:
- Korean-style Pak Choi and Crispy Sesame Tofu: Soy contains isoflavones, which have antioxidant and anti-inflammatory properties. Tofu is also great source of protein, calcium and iron.
- The Ultimate Bean on Toast: Beans contain resistant starches, fibre, plant proteins, antioxidants, phytonutrients, iron and other minerals. They lower cholesterol and regulate blood sugar and they have also been shown to increase longevity and reduce the risk of stroke.
- Lion’s Mane Steak: Mushrooms improve overall immunity and contain polyphenols, which are natural antioxidants that prevent cellular damage. They are a source of B vitamins such as B12, niacin, and folate, which have all been shown to lower the risk of developing certain non-communicable diseases, such as Alzheimer’s.
Allan adds: “With Hume, the plan is to create a place for healthy eating and living and myself and the team can’t wait to get started and introduce our philosophy to Liverpool. We also understand that life is about balance and we all like to let our hair down every now and again. As such, our venue will be licenced. Our alcoholic drinks will match our commitment to use the best, minimally processed ingredients – such as serving the best in organic, natural and biodynamic wines and beers.”
