With more than 20 years’ experience in the kitchen, Ray Taylor learned his craft in some of Liverpool’s best-known kitchens including The Left Bank (now Spire) Living Ventures’ Living Room and Lucha Libre. Alongside running corporate kitchens and large-scale events such as Hyde Park’s British Summertime Festival, Ray successfully managed teams preparing food for over 300 engineers and crew during the 11-day festival.
It was his 2014 move to Australia, working at the renowned Tall Timber, Melbourne that inspired Ray to focus on health food. With the emphasis on great tasting vegetarian, vegan and meat-based food, cooked to order using the freshest ingredients, Ray was inspired to bring those ideas back to the UK.
Most recently Ray established his own successful business, Peel and Coconut, delivering his own healthy, ready-made dishes to customers’ homes. The demand for these health orientated dishes gave Ray a passion and desire for more. When the opportunity to take over 109 Allerton arose, he saw real potential in the South Liverpool restaurant and decided to take it on.
He said: “109 Allerton is right in the heart of Liverpool’s latest culinary base and it’s a thriving community. Although it can be difficult taking over an existing business, I really liked the health-based ethos and there were some great dishes already on the menu.
“We’ve kept best-selling favourites like the 109 Superfood Bowl as well as developing new recipes. We’re really focussed on delivering great customer service too, so we’ve increased our front and back of house team and it’s great to see old customers returning. We’re delighted with the feedback we’re getting.” Ray and his team are now busy developing new dishes for the forthcoming Friday and Saturday evening menu, which launches on 21st June to coincide with celebrating the longest day of the year.
Ray added:“We’re busy testing our new evening menu and we’re really excited to bring back Friday and Saturday evening opening in time for summer. We’re all about healthy, tasty food but know it’s about balance too. So, expect some indulgent desserts and some new additions to our amazing breakfast and lunchtime menus too.”
