Frederiks announces new spring menu in colloboration with Executive Chef Dave Critchley

Frederiks, the popular Hope Street live music and dining venue is launching a fresh new food offer this month, developed in collaboration with renowned Executive Chef and twice Great British Menu contestant Dave Critchley.
With an impressive career that includes leading some of the North West’s top restaurants, earning two AA Rosettes, and working with Liverpool Football Club for four years, Dave Critchley brings a wealth of expertise to Frederiks. His experience also extends to catering for professional sports stars and local celebrities.
Frederiks engaged Dave’s culinary expertise before Christmas to refine the venue’s food, resulting in a menu that embraces bold flavours and satisfying portions.
Discussing his direction, Dave commented:
“The brief from the Fred’s team was simple: ‘We want guests to feel like they’ve been fed.’ I started by reimagining some of Frederiks’ much-loved dishes and introduced a selection of new options, all crafted for incredible flavour—without counting calories.”
The Spring menu takes inspiration from a fusion of Italian and American cuisines, featuring informal sharing plates, hand-shaped Pizzettes, and indulgent desserts designed for comfort-eating and taste.
Highlights include; Mac and Cheese with Colman’s mustard, parmesan, and black truffle; Salt Cod with crushed pea, mint, and lemon butter; and a refreshing Watermelon Salad with pumpkin seeds, mint, lemon, and crumbled goat’s cheese.

In a nostalgic nod to Frederiks’ original 2014 menu, Sliders have been reinvented for 2025 with options like smash burgers, buttermilk chicken, and roasted jackfruit with bourbon sauce and pomegranate slaw.
Moreish desserts include Frederiks’ signature Cinnamon Doughnuts served with warm jam and Nutella, New York Cheesecake with white chocolate and raspberry, and a reimagined Sticky Toffee Pudding featuring sticky Medjool dates and dairy ice cream.
Alongside the refreshed food menu, Frederiks bar team have revisited its decade-old cocktail collection, reviving classics and introducing exciting new creations, including:


Midnight on Hope Street – a smooth yet bold mix of Evan Williams bourbon, shiraz, and almond syrup, Chica En Fuego, a fiery cocktail which packs a punch with tequila, jalapeño and pineapple; and the Cucumber Rose Collins, which blends gin, rose, cucumber, and grapefruit – perfect for the warmer Spring days.
All Fred’s classic cocktails are competitively priced at two for £15, available at all times except after 6pm on Fridays and Saturdays—an ideal opportunity to explore the menu.
Frederiks’ new menu launches on Tuesday, 15 April, with the kitchen staying open late on live music nights. Guests can enjoy delicious food alongside Hope Street Jazz – which runs Tuesdays to Thursdays and Secret Improvisors Club on Fridays, which features top-tier jazz performances followed by DJ GloryTo spinning jazz, funk, and soul into the early hours.
