Ma Boyle’s launches world’s first Guinness Scouse

Ma Boyle’s Alehouse and Eatery’s unique ‘Global Scouse Month’ is proudly back for the second year running, but this time with an Irish twist!
Global Scouse Month is celebration of the classic Liverpool dish that Ma Boyle’s is world famous for. The celebrations sit alongside the annual international Global Scouse Day on Saturday 28th February, where Scousers from all over the world celebrate the historic dish.
This year is extra special, as Ma Boyle’s have exclusively collaborated with Guinness and brand owners Diageo to create four world-first Scouse specials using Guinness as a key ingredient in Ma’s Boyle’s Classic Scouse. There dishes are Ma’s Guinness Scouse, Ma’s Veggie Guinness Scouse, Ma’s Guinness Scouse Pie and Ma’s Veggie Guinness Scouse Pie. These limited-time specials were developed in-house at Ma Boyle’s, with the locally-sourced beef marinated in Guinness as well as it being used in the reduction stage of cooking the dish and the Veggie Guinness Scouse and puff-pastry pie variants both served with Guinness gravy.
This partnership between Ma’s and Guinness blends the culturally historic dish with Liverpool’s most popular tipple. It was last year when the team at Ma’s turned Global Scouse Day into their own extended version.
Ma’s reputation as the home of Scouse reached an international audience last year with the Japanese Ambassador to the UK, Hiroshi Suzuki, trying our Scouse for the first time with Metro Mayor, Steve Rotherham – and declaring ‘that’s boss scran’ in viral clips that went around the world and was seen by millions.
And now, endorsed by superlative Irish stout Guinness, together they are taking Scouse to a whole new flavour-packed level. The quartet of brand-new Scouse dishes and Ma’s signature classics are available from Wednesday 11th February to Wednesday 11th March during Ma’s Global Scouse Month.

“Last year, as part of our Global Scouse Month, in addition to the puff-pastry pie version we introduced a Scouse Cottage pie and also a Spicy Scouse, with chorizo and sweet potato that was so in demand we kept it on the menu. Scouse is more popular than ever, with locals and tourists seeking out Ma Boyle’s for it.”
“For 2026 we knew we wanted to do something different and infuse Guinness into four brand-new Scouse dishes to complement our existing classics. Scouse is so versatile and ripe for invention with countless variations available, so it feels fitting to introduce these debut dishes.”
Harking back from Liverpool’s bustling port days, Scouse was originally a dish whose ingredients were a mix of cheap and filling, born of hardship and endeavour. Originating from the word Lobscouse, it was a dish commonly eaten by sailors travelling across Northern Europe who frequented Liverpool. The famous hearty stew generally consisting of meat – usually either lamb or beef – with potatoes, carrots and onions and served with pickled beetroot or cabbage and a chunk of crusty bread on the side. Over the decades, the name was shortened to the version known across the world today – Scouse.
Scouse is many things to many people, shaping the identity of the city and still served across Merseyside and at home, ever popular, with endless variations. The classic dish is an inventive and enduring staple which Ma Boyle’s have proudly served for decades.
