Stoke in Radisson Red has a brand new menu

With its spectacular views of St George’s Hall and its stunningly plush interior, Stoke Brasserie & Grill at the Radisson RED Hotel is already a favourite with diners.
And we suspect the Lime Street venue is going to become even more popular. Executive chef Christina Konstantopoulou is celebrating her first anniversary at the Stoke Brasserie & Grill with a beautiful new summer menu – and it’s one that’s not only full of fresh seasonal dishes and small plates, but one that aims to take the food there up to another level still.
Christina, who’s worked in top hotels and restaurants across the UK and in 5-star and Michelin-starred restaurants in her native Greece and Paris, says:
“We wanted to bring something new.
“Stoke restaurant already appeals to everyone. There’s such a variety on the menu that whether you are a family with children, or whether you are coming here for a special occasion, there’s something you can choose from.
“There is comfort food, there is tapas style, and there’s a classic British plate, you can find everything.
“Liverpool is mostly about comfort food, and you have to listen to your customers, but for this year we wanted to create something that was a little more elevated too.”
“We’re keeping our classics and comfort foods but slowly we are going to introduce something a little bit different, and make it not fine dining like everybody, but casual fine dining.
“Not everyone can afford £200 to eat in a fine dining restaurant, so I wanted to create something where people can come and, for £20 or £25, they can have a ‘better’ plate that’s going to be elevated; they can have that fine dining experience with good wine and good food, something a little bit more special, without it costing a fortune.”
“We didn’t want to scare people so we have both sides, the comfort food and the casual fine dining, but it will be giving people the choice, something special and a bit of an occasion.
“You’ll enjoy the food – and I will add that the portions aren’t ‘fine dining’ portions, they’re normal portions that are going to fulfil you. That comes from my Greek heritage … we eat a lot!”
So, as well as ever favourite dishes and classics like beef ragu tagliatelle, Scouse and grilled sirloin, burgers and risotto, all created and cooked to perfection, Christina has introduced some new gourmet dishes.
They focus on succulent flavours and textures and, with an elegance of appearance and taste, will have huge appeal.
They include grilled swordfish with lemon curd, kale and samphire, and cod with garlic mash, tartare, hollandaise and clams.
“We’ll also have a deconstructed spinach pie, with puff pastry, feta, spinach, spring onions, and dill,” says Christina. “The produce we use will all be fresh, and there will be attention to detail.
“From small plates to large plates prices will range from £7 and £10, to £10 and £15, £25.
“But it will be the best, we want the best so we can give that to our customers.
“And everyone can come and have something they enjoy.”
