The Dog & Collar to serve pints of Guinness for £1 in celebration of its first birthday
2 months ago
Liverpool’s much-loved Dog & Collar Pub on Hope Street is marking one year since opening its doors with a four day Birthday Week celebration.
Running from Monday 23rd to Thursday 26th February, Dog & Collar is inviting loyal friends and food and drink lovers to raise a glass to everything that has made the pub a standout in the city.
The week follows the launch of the pub’s brand new spring menu, with refreshed dining room and taproom offerings, and is designed as a thank you to the community that has helped shape The Dog & Collar into a modern classic: a proper pub with warmth, generosity and a quietly elevated approach to food and drink.
Each day of the birthday week celebrates a different side of the pub, with playfully absurd value at the heart of every event.

The celebrations kick off on Monday 23rd February from 5pm, with £1 pints of Guinness, served in a limited-edition birthday glass. With just 150 pints available, guests are encouraged to arrive early for what promises to be one of the most talked about pints in the city.
On Tuesday 24th February, the focus shifts to food, with a one day only set menu celebrating hero dishes from the newly launched menu. Available all day, the menu is priced at £19 for two courses or £24 for three, echoing the popularity of January’s much loved set menu. Dishes include fan favourites such as the Scotch egg and steak frites, alongside new additions like whiskey cured salmon, 60-hour roasted sweet potato with whipped tofu, fire roasted half chicken with mustard sauce, and the Liverpool tart. This event is bookable.
Midweek brings a moment of theatre on Wednesday 25th February, with an Irish Coffee Happy Hour from 6pm to 7pm. Guests are invited to drop in even briefly to see the taproom bar lined end to end with freshly made Irish coffees, all priced at just £1, in a visual celebration of one of the pub’s most loved serves.
The week concludes on Thursday 26th February from 6pm, with £1 oysters, served until they’re gone, alongside live music from the Taproom Trad Band, bringing together food, drink and music in a way that feels distinctly Dog & Collar.
Since opening in February last year, The Dog & Collar has earned a reputation for its cosy taproom snugs, glowing fires and relaxed sense of welcome, paired with a beautiful first-floor dining room that has quickly become a destination for leisurely weekend lunches, pre-theatre dining and long evenings over good food and drink. Sitting proudly on Hope Street, the pub blends traditional warmth with a quietly confident modern touch.
Founder, Daniel Gillbanks said:
“From day one, The Dog & Collar was about creating the kind of pub people want to come back to again and again,”
“Warm, generous, and rooted in great food and drink. This birthday week is our way of celebrating the people who’ve made that possible and saying thank you for an incredible first year.”
Managing Director, Daniel Kelly added:
“We’re incredibly proud of how far the pub has come in a year, particularly in terms of our food and drink credentials,”
“These events are playful and a little absurd, but they reflect something serious underneath — our belief in hospitality, value, and creating memorable moments for our guests.”
