Municipal Hotel’s Seaforth Restaurant’s odds-on favourite with new summer menu

A succulent dish inspired by legendary racehorse Red Rum is one of the highlights of a new summer menu at the Municipal Hotel’s stylish Seaforth Restaurant. Its Cured North Atlantic Salmon starter uses salmon from local artisan supplier Christopher Crosbie.

And Seaforth Restaurant’s new executive chef Andrew Green says:

“We’ve got him to develop a cured salmon based on the famous Grand National winner Red Rum, using a dark rum, grenadine syrup, pink peppercorns and orange zest, to name just a few ingredients.”

The dish is guaranteed to be an odds-on favourite with diners at the luxurious Dale Street hotel which has transformed Liverpool’s Grade II listed former council building. But it’s only one of a host of dishes which are set to delight guests, alongside its re-imagined signature Scouse, a superb selection of fish and meat dishes, pasta favourites – like the fresh tagliolini pasta with summer truffle, asparagus and pecorino cream – and vegetarian dishes, like the rose petal harissa roasted cauliflower, and more.

Municipal Summer Menu

Seaforth embraces the city’s rich history of trade and its world-famous docks, to bring together people and create a culinary fusion of cultures and flavours.

“I always try to start with what’s in season and create a balanced menu with favourites but done with a modern twist, and I really try to sniff out local gems in the area.” They can be found, he says, in everything from the fabulous fish dishes to local meats, cheeses, fruits, and locally baked breads. 

Digital Marketing Executive, Laura Delaney adds:

“I’ve tasted almost everything on the menu, and it’s amazing. It’s a mixture of land and sea, with fresh, local produce, and the food is just incredible.”

Tucked away to create exclusivity and privacy, the Seaforth offers a more formal dining experience which, while relaxing, still benefits from the livelier atmosphere of the Palm Court Bar.

Bright and open, with light wood furniture and a sparkling central glass chandelier, it exudes an elegance which complements the fine-dining menus – yet with prices that are totally accessible.

New for this summer is a lunch menu that’s served from 12 noon to 6pm, offering a superb afternoon dining and pre-theatre option.

You can get two courses for £29, and three courses for £35: “Which is great value, especially for the quality of food that people are getting,”

Municipal Summer Menu

Starters on the ‘Time to Dine’ lunch menu include smoked mackerel mouse, and soup – a mouthwatering watercress velouté with goat’s cheese bon bon and sorrel oil; and mains like panko fried breast of chicken with petit Caesar, pecorino shavings and truffle oil, and sea bass served with Thai coconut broth, Morecambe Bay shrimps, roasted carrot, pak choi, and crispy noodles.

Desserts include poached strawberries with Chantilly cream and honey tuille.
