Watch as we take you inside Co.Co – Castle Street’s newest venue, serving up coffee and cocktails

A gorgeous new cocktail bar is opening on Castle Street, Co.Co serves coffees, freshly-baked pastries and cocktails seven days a week. 

Castle Street is one of Liverpool’s top places for food and drink and now the launch of Co.Co means there’s an extra reason to head there in the daytime or evening.

With bespoke floral interiors designed by Baltic Secret Garden, Co.Co has created a really beautiful venue that brings back to life original architectural features in one of the street’s hidden gems.

In the day, alongside a menu of speciality coffees, there’ll be all kinds of sweet treats like delicious pastries from independent Liverpool bakery The Butterholic, including their famous cruffins, and New York-style melt-in-the-mouth stuffed cookies homemade by KG Confection.

Then after dark, it’s time for cocktails, when Co.Co’s expert bar team take over to mix up a list of classics and signature cocktails.

There’s the much-loved Pornstar Martini, of course, because no cocktail menu in this city could ever be without one, and a zesty and sweet Margarita made up of tequila and triple sec. 

Because we’re definitely not ready to give up on summery drinks just because it’s nearly December, Co.Co has its own special spritz – a fresh and fruity Hugo Spritz which is made from gin, prosecco, hints of elderflower and mint. 

And for something which brings back sunsets on the beach, there’s the Tiki-inspired classic Mai Tai, a medley of rums with a nutty and citrus twist.

If they all sound too good to wait until the evening, that’s no problem because Co.Co will be serving a selection of brunch cocktails to start the party nice and early.

General Manager, Vasilis Michelakis, says Co.Co will be a welcome addition to Castle Street. “It will be bringing a day-to-night venue to one of the city’s most renowned culinary and drinking hotspots. Offering quality coffee, delicious pastries and brunch cocktails during the day, Co.Co will then transform into a bar with a welcoming and up-beat atmosphere during the evening. 

“Myself and the team have worked hard to perfect Co.Co’s offering with local suppliers and we’re incredibly excited to welcome our first guests from this Saturday, November 26, when we open our doors for the first time.”

Day Manager, Joseph Goulden, added: “At Co.Co, we aim to provide a relaxed environment where guests can enjoy a cup of coffee in beautiful surroundings. The team has sensitively transformed the building, adding life and excitement into the venue whilst honouring its unique characteristics that are etched in the historical building. 

“By day, guests can work from Co.Co with a coffee and pastry to hand, and by night, the venue will transition so that couples, groups of friends and colleagues can take to the bar for an expertly created cocktail in sophisticated surroundings.”
